Glob Flop

I've been trying to add variety to our dinner menus so I went back to an old fave that we haven't had for years...Welsh Rarebit (or Rabbit). I couldn't find my old recipe so I went to the internet and found one that sounded right....wrong!

Typically I'd make a cheese sauce starting with a basic white sauce and adding cheddar cheese. So this recipe called for 2 cups milk to 1/2 cup flour. I started with the roux then added the milk. As it started to thicken I started to worry...and then it turned to concrete (well almost:). I should have stopped then, cut my losses and turned to another option. But no, I added the 2 cups shredded cheddar which was the cheapy house brand (second mistake). So now I'm committed. And this stuff is pretty darn thick.

Made the toast, cooked the bacon, glopped on the sauce and voila! Yuk! Jim is a trooper and he said, "Oh it's fine, a little thick." I could not finish it. Naturally there were leftovers that I had to chip out of the pan (just kidding). Oh well...I rarely make a mistake that bad. But now I feel like I have to find a really exquisite recipe to make up for my failure. Let's see...duck a l'orange? beef bourguinon? Hmmmm.....

Tonight we are joining our kids for a Middle Eastern dinner in Corona. The weather looks pretty dicey but I need a dose of family. We'll stop in to see Naomi and baby Evan then join the kids for an early feast. Hope we miss the thunderstorms and hail that are forecast.
